This has been a really busy week for me. I’ve spent all my time working on the store. We’re going to be setting it to live sometime over next weekend, so by the first full week of June, we should be all set. (Fingers crossed!)
|
One of the things that I’ve been doing since mid-December is getting in at least twenty minutes of exercise almost every day.
|
When it was rainy out, I rode the pedal machine every morning while sitting underneath the grow lights for my plants. (The pedal machine is generally used by people under their desks so they can pedal away while working.)
|
Now that it’s nicer, I’m walking a mile outside. Most days, I walk around my property, doing two big loops. Somedays, though, I drive into town and walk along the trail there. (And yes, I’m still skipping regardless of where I’m walking.)

Here are a couple pictures of one of my favorite flowers along the way. I love how it looks both in bud form as well as once it flowers.

Last year, when Blaze and I went to Mexico, I experienced something that a lot of American travelers do, namely, that foods that bothered me so much in the US don’t bother me as much outside of the country. I could eat all the baked goods, all the rice, and all the dairy without issues.
|
One of the things that I learned when we returned is that most of the US rice is “enriched.” I’m sure that enriched is good for something. All I know is that enriched rice makes me sick for a couple of days after eating it. However, non-enriched rice barely bothers me, and we can get that at the regular grocery store. (It’s generally imported.)
|
So we decided to try some Mexican flour in some baked goods. I even made bread with it.
|
Back in my twenties, I made bread on a regular basis. My favorite recipe is Beer-Garlic Bread, that I generally made using stout beer. This time, I used Mexican flour and Mexican beer.
|
Not only did it taste divine, it didn’t bother me. My stomach wasn’t a massive knot after eating half a slice.
|
In fact, I took two half sliced one day and made myself a grilled cheese sandwich. I haven’t had a grilled cheese sandwich since 2017, maybe longer. It was so good.
|
I took antihistamines before I ate it. And I drank a lot of water. But I barely reacted to it.
|
This weekend, I made a rustic Italian loaf, using 00 Italian superfine flour. (It was on sale at PCC, half off.) OMG. So tasty! And again, I don’t react to it like I do to regular bread.
|
Now, I’m not going to turn into some sort of super-carb eater. I’m going back to keto tomorrow. However, it’s so nice to be able to have baked goods now and again that tie my stomach into knots.
